After my testing the knee ride so cycling is ok. Running not so much, probably time to get the knee supports on again.
Comrade Boris is cancelling all Christmas plans… I was suppose to be in the English Lakes for a few days camping and hiking but that’s not happening now so it’s stay at home activities…… 🤔
If you happen to be in Leeds at the right and hungry for some truly delicious food then I can thoroughly recommend eating at Punk Vegan. Links these guys food was awesome.
But ya can’t eat out every day, so inspired by the punk vegan “Nude Burrito 🌯 “ I decided to make my own… none nude version.
What’s in it I hear you ask?
Meat free mince, mixed with Fajita seasoning and bbq sauce
ice gem lettuce
Lime and coriander rice pack
Onion
Peoper
Mushroom
Spring onion
Tortillas
Skin on potatoes and sweet potatoes
Jalapeños and chilli flakes
Guacamole
Now it was soo good… like I ate too much at once and had to have a lie down soo good.
Totally Vegan, most healthy and my god delicious!
Make it yourself it’s great food, kids loved it, e
Recipes found, (thanks Google) ingredients bought, kitchen setup and away we go making my own home made training drink with electrolytes, energy balls, recovery shake and granola bars
Recovery Shake
Take half the banana or a small one.
Glugs of, spoons of, dash of the rest of the ingredients, play with whatever works for you consistency wise
Put it in a blender / smoothie maker
Whizz!!
Drink…
Energy Drink – Electrolytes
Water
Green & Berry tea
Calcium magnesium
Salt
Fruit juice
Honey
Boil the tea bags, salts. Calcium, honey, and allow to cool
Strain the liquid into a storage jar/bottle
Add the fruit juice
Lucozade, or Gatorade this is not! Looks weird… murky. But surprisingly it tastes ok.
Will test it out tomorrow.
Bars and balls
The energy balls recipe I’ve previously posted, the granola style energy bars are very easy again.
Trail mix
Choc chip (dark)
Honey
Golden syrup
Ground up rolled oats
Make as much or as little if this as you want / need, it should be sticky in consistency to bind together after heating.
Make the mixture to you liking the fun thing with this is that you can add any dried fruits, nuts, berries you want to and it always tastes good.
Spread it on a greased tray, foil or grease proof paper prevents it sticking.
Bake at 160-180’c for 25mins, or until the edges start to go brown.
Take out, chop up whilst it’s still warm into shapes or bars of your choice.
Try not to east it all at once! 👍
Update:
Electrolytes drink needs less salt! Orange rather pineapple juice may improve that balance of sweet and salty
Update: 2
Definitely less salt… so thirsty now! And stuck with the taste of salt in my mouth. In fact the “swamp water” as my son described it probably wants a total rethink. Maybe more diluted juice with a touch of salt…. will have to try again.
Yup… those look like pig 🐷 sausages but the are in fact Quorn ones and they’re bloody delicious, mixed with mushrooms, onion, pepper, garlic, jalapeños, tomatoes, 3 eggs and a sprinkle of grated Vegan cheese.
Could have eaten it twice!
Fills me up until lunch time and mostly healthy… mostly.
Since returning to proper exercise and training I’ve been mostly eating normally and then on long rides buying bars and energy gels. Which are fine for the energy output but don’t agree with the rest of my digestion system.
With a great recipe for “energy balls” took me 10mins to make, packed 4 into a sandwich bag and took them on my 2 hour run. Had one every 30mins and felt great, good energy levels, tasty, no digestion issues. And for the cost of the ingredients being less than a single rides worth of snacks and gels. Plus there’s so much I should be set for the next 4 weeks long runs and rides!
I replaced the coconut with ground nuts from the fruit and nut selection (because I forgot coconut despite having a list with it on)In a bowl, mix it and jobs a good in! The artistic shot!
